Chocolate & raisin biscuits from The Forest


On the day we used a mixture of walnuts and pistachios - whatever's in the pantry!







This recipe was shared by Christine and was handed down from her mother.  Her mother was given the recipe by a Czech lady whose husband worked at the Wanilla Forest with Christine's father who managed the Forest in the 1950's where many European immigrants were employed after the Second World War.

The biscuits are really tasty with the chunks of dark chocolate and raisins, they're very much like the texture of biscotti, they keep well and are fabulous with coffee - it's hard to stop at one!

Chocolate & raisin biscuits
  • 3 eggs
  • 3 cups icing sugar
  • 2 1/2 - 3 cups self raising flour
  • 2 oz walnuts (approx 1/2 cup) chopped coarsely
  • 1/4 lb dark chocolate (150 grams)  chopped into chunky pieces
  • 1/2 packet seeded raisins (about 250 grams)
Beat the eggs and sugar together until creamy.
Add the fruit, nuts and chocolate then add the sifted flour and combine the ingredients.

Knead the mixture until it comes together.

Divide the mixture into four and shape the pieces into a torpedo shape to fit the oven trays.

Glaze the torpedos with beaten egg yolk.

Bake in a moderate oven for 35 to 40 minutes.

Removed from the oven and immediately cut the loaves on the diagonal and place on a cooling rack.
